My friend,I really understand your dilema.But the awesome suggestions given above are great.Just to contribute my bit.I think this is what i would do first.I would find out those already in the space,study the structure of their websites,run some inspection on it,i would need to ascertain what their priorities were,how many years have they been in the space,what challenges comfronted them and how they dealth with it.
2.Knowing their priority will help me to figure out if they they prefered an already made theme,or a coded website.
3.Business prioties and concerns deffers.So there is need for real consultation and sincerity to ask yourself what you really want.
In conclusion,this is my expert advise from experience.If you want your business to lunch out quickly,go for a theme that would at least give you some relatable features and flexible customization.
,while you get your business online and running,you have to ensure you have a backup because anything can happen and if you dont have control over it,you will be left stranded.
now that your business is online and your priority requires a coded website,then you can get your team together to start working on it or you out source it,so you gain control afterwards and then you can migrate to your desired plan.
