Cart with best Inventory Management

I am trying to open a sneaker website that will have exclusive rare sneakers where I may only have limited sizes available. For example, for each sneaker I can possible have every size from 8 to 13 but for a specific sneaker I may only have inventory in sz 10 and 11.5. I have been trying to find a prefab cart that will only show the sz 10 and 11.5 on the product page. So far I can only find carts that will show all the sizes from 8 to 13 but only let the customer add the available szes to the cart.

Is there any prefab cart that can do what I need?

Volusion is absolutely terrible for reliability right now. It's been getting worse over the past half of a year or so. People's sites are constantly going down, credit card information isn't being sent correctly to the processors, and it's only becoming more frequent.
